Title: Skillet Herb Bread

Yield: 10 servings
1 1/2 c All-purpose flour
2 tb Sugar
4 ts Baking powder
1 1/2 ts Salt
1 ts Rubbed sage
1 ts Dried thyme
1 1/2 c Yellow cornmeal
1 1/2 c Chopped celery
1 c Chopped onion
2 oz Jar chopped pimientos;
- drained
3 lg Eggs; room temp, beaten
1 1/2 c Milk
1/3 c Oil
Set oven @ 400ºF/205ºC.
In a large bowl, combine the flour, sugar, baking
powder, salt, sage and thyme. Combine cornmeal, celery,
onion and pimientos; add to dry ingredients and mix
well. Add eggs, milk and oil; stir just until moistened.
Pour into a greased 10" or 11" ovenproof skillet. Bake
until bread tests done, 35-45 minutes. Serve warm.
